Robert Olson
Adaptability is the mechanism of survival in nature. From a young age, Robert was enthralled by the simple displays of nature in a backyard field and the tug of fish at a nearby lake. By mere chance, a successful high school wrestling experience led to a college recruitment, where he had the opportunity to study what he truly loved—nature. He earned an undergraduate degree in zoology followed by a graduate degree in aquatic ecology, which opened doors for him to study fish in two of the Great Lakes, the Columbia and Salmon Rivers of Idaho and Oregon, and the salmon populations of South-Central Alaska and Kodiak Island. Pure happenstance also led to connections that resulted in an invitation to study the elephants of the Okavango Delta in Botswana. This adventure marked the beginning of a foray into wildlife photography. Opening a gallery in Anchorage helped fund numerous expeditions into the vast wilderness of Alaska. After a fulfilling career in photography, he was invited by a friend to help develop a kung fu/tai chi school near the Purple Cloud Temple in Wudang, China. He eagerly embraced the opportunity to live and study Taoist philosophy. More recently, he applied architectural skills learned in high school to build several houses in Estes Park. That experience led to a wonderful opportunity to put those skills to use at Eagle Rock School, working alongside an exceptional team of talented individuals.

Dillon Powell
Nearly a decade has passed since he graduated from Eagle Rock School, and this Eagle Rock graduate has decided to come back and work for us as part of our team of beloved, talented, and committed Chefs! Culinarily independent and inclined, he was regularly put in charge of meals for his family growing up from a very young age. From traditional holiday dinners to epic brunches, his family and friends were continuously satisfied and even impressed with his intuition for flavors and the passion he put into his food. Once Eagle Rock came into his life, his culinary interests carried over into tasty house dinners during house retreats and his regular duties for Kitchen Patrol, which only enhanced his knowledge base and ignited further interest and passion for food while at ERS. Since graduating, he has worked in several kitchens as a prep/line cook, honing his skills and learning all he can. Most recently, he has worked at Seasoned, an American Bistro in Estes Park, as a prep/line cook. There, he was exposed to classical French techniques and recipes, further expanding his repertoire of delectable desserts and traditional favorites. Food being of course, at the center of his focus as a chef at ERS, he also has a unique perspective as a previous student that strengthens another central focus as an ERS chef, interpersonal communication and relationships with the students as their instructor and chef. Dillon’s goal is to be a bridge between the kitchen and the students, making work in the kitchen less of a thing you have to do, but something you get to do, be a part of, and is also fun to do as an ERS student.
